How Do You Forget to Eat Lunch?

Yesterday was our first full day back at home and I'm still exhausted!

Thank you for the kind comments yesterday, and yes, my sister and I were both in the ER over the weekend with our loves.

Yesterday we took Sweet P to visit her sister cousin and it was so great to see them smile, laugh and and hug.

I feel so helpless when the people I love are hurt and I can't take the hurt away.

So what do I do? I cook. Even though it's such a small thing, I feel like I'm helping in some way and it keeps me busy and my mind off worrying.

While the husband is recovering, he's supposed to eat bland food. So I hit the kitchen while they were napping. I made oatmeal for breakfast, hummus and black bean hummus for snacks, boiled 2 chickens and made chicken salad for lunch, chicken-artichoke-gnocchi to take to the hospital and homemade chicken noodle soup for dinner. I made enough of everything for my family and enough to share with my sister and my brother (in-law) so they could have a little home-cooked goodness at the hospital.

I was so wrapped up in the day that I forgot to make myself lunch. Have you ever done that!? Trust me, I don't do it often. I like food. It was about 3:30 and we we on our way to visit my niece when I realized I hadn't had lunch.

Sheesh. 

Anyway, I took 2 pictures today. One of oatmeal - don't ask why because I don't know.

The other was the chicken noodle soup.

Homemade Chicken Soup with Noodles

It was so good. I saw some noodles on P-dub's recipe for noodle soup (I didn't use her recipe, just the noodles.) They are Reames frozen noodles and they are amazing. They really taste like homemade.

So here's my recipe I concocted for the soup.

I used 6 cups of chicken broth from one of the chickens I boiled. I had pulled all the meat off the chicken and chopped and shredded it, added it to the broth with sea salt, 3 tablespoons of parsley flakes, a teaspoon of thyme and fresh ground pepper. After it came to a boil, I added the frozen noodles, 5 chopped carrots and a chopped onion. Then I let it simmer for 25 minutes. Then I added a mixture of 1 cup of milk with 1/3 cup of flour and another cup of milk. Then I let it simmer for another 15 minutes while I gave Sweet P a bath. Then just salt and pepper to taste.

After all that, I called it a night and watched a little tv. Today I plan on relaxing.

  2. I have days where I don't eat lunch. Mainly because I get swamped at work and by time the afternoon comes around its to late to eat. But when you keep yourself busy you dont really get hungry, or its easier to ignore.

  3. Oh gosh, I've skipped lunch a few times.
    That soup looks amazing! Homemade chicken noodle soup is on the top of my favorites list. I've only made the noodles though, I'm definitely going to look for the frozen! Wow, I want that for breakfast right now....

  4. I just boiled a chicken and am trying to figure out what to do with it for lunch... Don't have any noodles but this pic looks so good I may try to make some!

  5. Chicken salad sounds even better!! (Since I just came in from the garden, am a little hot and sweaty and was thinking soup wasn't quite right.) Thanks for the suggestion! (And I changed my profile to make my email visible...I didn't know it was hidden.) :)
