Mexican Lasagna

In honor of the upcoming Salsa Fest, here's a quick recipe that you can top with some salsa.

It's easy, you only dirty 3 dishes in the process and it has cheese and salsa. Good stuff.

You'll need:
corn tortillas - I did 3 layers and used 9 total but you can do 2 layers and use 6, and you could try flour tortillas instead of corn
1 can of refried beans
2 lbs ground hamburger or turkey meat
1 package of taco seasoning
2 1/2 cups mexican cheese - shredded, I used the mix bag that has like 4 different kinds of cheese
sour cream - optional
salsa
sliced avocado or quacamole - optional

That's it.

Brown the ground meat, drain and add the packet of taco seasoning and follow the instructions on the packet. Then put a layer of tortillas in a 9x13 pan, top with 1/3 refried beans, top that with 1/3 of the meat then sprinkle some cheese over it.

Steps for Mexican Lasagna

Do that 2 more times.

Let your little shadow try some beans.

Put the dish in the over at 350 degrees for 30 minutes.

Serve with you favorite toppings. We had onion, sour cream and salsa on hand so that's all we used. If avocados weren't so expensive right now, they'd be on there too.

And there's plenty for leftovers for lunch or to freeze for a quick dinner again.

  2. The costs of an avocados are killing me right now! Thanks for the recipe. I have all of this on hand plus a jalapeno and onion! I will make this for dinner tomorrow night!

  5. we just made this tonight and it was so yummy! we added broccoli with the mince and for the sauce my hubby did 1/4 cup light sour cream, 1/4 cup light mayo (best foods) & tbsp sweet pepper sauce & 1/4 c smoked chipolte water (place smoked chipolte in jar - add boiling water - let soak - keep in fridge).

  7. This is one of my favorite recipes, only I pour on a can of enchilada sauce over everything before putting on the final layer of cheese. It makes everything gooier. So good!
