Thank you pinterest for making my life a little happier and thank you Erin, from One Particular Kitchen, for sharing my new favorite recipe.
You guys know I like my salsa pretty hot, right. Well, after seeing this on pinterest and then reading all the reviews on how amazing it was and especially how hot is was, I pinned the recipe and finally tried my hand at it.
I halved the recipe because it said it made a ton and I was still very cautious to believe I had found the one. The halved recipe still made a lot.
Here's all you need (plus cilantro if you like):
Then you cut the tomatoes and onions in half, chop off the tops of the peppers and lay out on a pan and roast in the over until the onions are tender and the peppers are charred.
Next you put all that in a food processor with salt and cilantro. (I only have a mini food processor so I had to do it in like 8 batches.)
I also like my salsa a little chunky so I added some fresh diced onion and tomato to the roasted salsa.
Stir it up, eat and be happy you never have to buy another jar of bad salsa again!
I followed the recipe exactly (except I didn't use as much cilantro and added freshly ground pepper) and it was HOT! More than make your nose run, hot, almost too hot for me and the husband (almost). I think I'll leave out a few serranos and add a few jalapenos and try some other peppers in the mix and maybe even add a little lime juice for a different flavor. I'm so excited about this recipe and all the different things you can do with it!! Yay!

ReplyDeleteFYI - if you have a decent blender, try making it in there. I have a mini food processer and I once did things in small batches until one day I was making a milkshake and saw all these different buttons on my blender for like grating, chopping, etc, and I have never turned back since.
