Celebrating Donut Day and a Recipe

In case you missed it, last Friday was National Donut Day. A day we happily celebrate!

We got a late start to the morning and hit up our favorite donut shops only to find they were out of donuts. Clearly, we weren't the only people celebrating this day. So, we made our way to shop number 3 and found a few donuts remaining. One of which was a chocolate-chocolate cake donut with purple sprinkles!

We ate our donuts and returned home for some fun. But we still had plans to continue celebrating. While the girls were napping, I got to work.

The day before we harvested some zucchinis from the garden so I decided to add one to my banana bread recipe and make some banana-zucchini donuts. Healthy. Right?

They were a big hit and you couldn't even taste the zucchini. Not that I would have minded because I really like zucchini bread.

Anyway, if you want to make some, here's the recipe I use. You could probably make these even healthier by substituting applesauce for the butter, something I plan on trying the next time I make these, but it was national donut day and there was no skimping on butter.

Banana-zucchini Donut Recipe

Ingredients:
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup butter - room temp
  • 2 eggs - beaten
  • 3 mashed bananas - best if they have brown spots
  • 1 finely grated zucchini- drained of excess moisture
  • 2 cups flour
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup chopped walnuts - optional
  • cream cheese frosting - optional

With a counter top mixer, cream the sugars and butter.

In a separate medium bowl, combine the bananas, zucchini and egg. Add that to the creamed sugar and mix on low until combined.

In another medium bowl, sift the remaining dry ingredients together and add it to the sugars and banana-zucchini mixture. Mix until just combined. If you're using nuts, add those and mix a little more.

You can either make muffins or use a donut pan to make the donuts like I did.

For the donuts, I scooped the batter into a freezer bag, zipped it up and cut a hole in one end. Then you just fill the donut mold with the batter and bake until golden brown.

Let then cool and enjoy.

OR take it to the next level, thus making them less healthy and top them with cream cheese frosting and some more chopped walnuts.

All About My Sweet P

As my due date approaches, less than 11 weeks to go, I'm trying to take in every moment with my little Sweet P that I can.

We shop, picnic, meet daddy to feed the ducks and just enjoy our time together.

She's a lot like her momma, in many ways.

She has been inherited my inability to sit still when music comes on, love of laughter and a serious love for donuts.

She's also a lot like her daddy.

She thrives in the cold, she has the most gorgeous eyes and isn't afraid to get a little dirty.

She loves to be outside and she recently got to walk our little dog for the first time. The kid oozes joy!

She oozes joy a lot and is getting big so fast. We tried piggie-tails for the first time, she insists on doing most things by herself, she can rock massive headbands, neon and sunglasses - at the same time, she loves to color and she's getting more and more independent every day.

All of a sudden, my little sweet P turned into a full-out child.

She's a riot to be around and although I will miss our time together just the 3 of us, I'm pretty excited to watch her continue to grow and become an awesome big sister.

We love you little Sweet P.

That Explains It

I'm assuming the post yesterday will answer a few questions as to my lack of presence here. A good friend called and asked if I was ok because I hadn't been posting so I decided I better clear it up here.

Yes, we are expecting another little one. Due date is set for April 1. Seriously, I'm not foolin' (get it, due date on April Fool's, yes I'm a nerd).

That means I'm close to 10 weeks along. It's a bit early than I wanted to share the news but the husband has been telling pretty much everyone - including strangers - so I caved and decided to share the news here too.

I haven't been feeling the greatest and I've been extremely tired. Like, I wake up and feel like I need a nap and have been falling asleep on the couch just after we put P down to bed (8pm). I don't really have a routine when it comes to writing this thing. Sometimes I write in the morning (when I was doing Insanity and up before the rest of the house - clearly I'm no longer doing that crazy workout) sometimes I write when P's down for her naps. She still takes two naps a day and I've been trying to nap when she does but I just can't fall asleep during the day. And, other times I write at night, but seeing how I'm falling asleep at 8 or 9 I just had the energy or desire to do it.

As you guys know, I really like food, however, I have been feeling nauseous all the time and just cooking food makes me want to puke. Too much for ya in the morning? Sorry, but seriously, the other night I was cooking ground turkey and almost had to stop and leave the house all together. The stench permeated the house and I didn't think the stink would ever go away. Needless to say, I didn't eat that meal and I certainly didn't have the stomach to stand near it to take a picture!

However, if I don't have to cook it, food isn't so bad. Bring on the donuts and ice cream.

All that to say there probably won't be many food posts for a bit. And since food is something I talk about a lot here, that probably means I won't be posting as often.

So, there you have it, I'm pregnant and preparing for a new little one. Ohhh, I am so excited about holding a teeny-tiny, sweet-baby-smelling little one.

National Donut Day

Yep. It's today. Do you want to know what I ate for breakfast INSTEAD of a donut?

I didn't plan this working out thing too well.

And an update on the working out thing, I have got up all three days so far and done that stupid cardio thing. My legs don't like me and it's very difficult to even straighten them. But, I guess that means I'm doing something to them, right? I did a whole lot better today than I did on day 1 so yay for me! I'm so ready for these next two days so I can have a little break. I know, only three days into it and I'm already happy about 2 days off.

Coupon - Why Yes

Do you remember my previous post about Sonic's new premium hot dogs?

Well, imagine my excitement when I got this coupon in the mail!


I can now say, sadly, that I have tried all four of their new hot dogs.

The last two on the list were the All-American dog. (not my fave)

Sesame Orange Shrimp

If you have followed this blog for a while, you know I love Martha Stewart's Everyday Food magazine. I love getting that she has pictures of all the recipes and she usually has easy, unique things to try.

Sometimes I have some ingredients on hand that I don't know what to do with and don't really like searching through her books to find a recipe. So instead, I go to her website. I think she publishes most of the recipes online anyway.

I had a bag of frozen shrimp in the freezer so I did a quick search for shrimp recipes and found this one for sesame orange shrimp.

I will say, the shrimp was delicious, however, if you make it, I recommend doubling the sauce recipe and making some noodles to go with it. I made rice but it wasn't the best. I think noodles with extra sauce would have been perfect.

What a Weekend

Thanks to Nana and Pappy watching Sweet P one day this weekend, we did a LOT of house work and got to check a few things off the never-ending-to-do-list. Yay!

The husband worked on the garden planting everything from onions and radishes to lettuce and herbs. And he did a little yard maintenance.

This is leftover from our fall garden! Who knew lettuce could last all winter?

While he was outside, I was inside. I painted the entire kitchen (2 coats even).

With all that work and no time to take long breaks, I realized how hard it is to cook, so, we didn't. Instead, we ate super healthy!

After posting my dogs from Sonic, I felt like I was cheating on Jim's so I had to give them some coney love.


After I dropped P off at Nana's, I picked up a little breakfast.

It should also be noted that if you are looking for some of the best donuts in town, go to Daylight Donuts in BA (on 145th by Papa Murphy's). They are amazing and they have these little, square donuts (about the size of a donut hole) filled with bavarian creme. mmm.


Ok, so maybe it wasn't that healthy but they were fast and delicious!

And when P wasn't with Nana and Pappy, she was helping us in the garden!


I think we have a tiny green thumb in the making!
